Sweet Potato Protein Kolache
(Stuffed with Dates, Carob Chips & Peanut Butter)
2 cups of Sweet Potatoes
2 scoops 1st Phorm Level 1 Peanut Butter
Chocolate Protein Powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp all spice
2 tsp Xanthan Gum
1 cup egg whites
1/3 cup Xyla sweetener
1 tbsp vanilla extract
1 tsp baking powder
Filling Ingredients:
1/3 cup dates
1/8 cup carob chips
2 tbsp peanut butter
1 tbsp sugar free maple syrup
Directions:
Preheat oven to 325 degrees. Grease a baking tin or muffin
pan (I used a mini muffin tin to keep my portions small)
In a blender combine the sweet potato, egg whites, spices,
and vanilla extract and blend thoroughly. Next, add in the protein powder and baking
powder, blend again, finally add in the xanthan gum and blend until all
ingredients are thoroughly mixed.
In a separate bowl chop up the 1/3 cup of dates and mix
together with the peanut butter Maple syrup and carob chips.
Scoop tbsp. sized portions of dough onto a lightly sprayed baking
pan or in a muffin tin. Add a dallop of the filling mix to the center of the
dough. Place in oven and bake for 20 minutes. The dough will puff up quite
substantially so be careful not to overfill the tins. Remove from oven and
cool. The pastries will deflate and you will have a chewy delicious kolache to
munch on J
