Sweet & Spicy Turkey Stuffed Peppers

Sweet & Spicy Turkey Stuffed Peppers


A healthy fit delicious dinner for 4 or 2 depending on how hungry you are :)


Ingredients:

2 Bell Peppers
1 yellow zucchini
2 green onion stalks
1 lb of 99% lean turkey meat
1/2 an apple
3 tbsp. egg whites
2 tbsp. garlic paste
2 sugar free maple syrup



Directions:
Preheat Oven to 375 degrees

Step 1: Cut the bell peppers in half and place in a lightly greased baking pan. 


Step 2: Chop up the onions, apples, zucchini, and sauteed with spices in a frying pan ( for the spices I used: pepper, salt, chili flakes, all-spice and a tablespoon of pureed garlic. Add in a tbsp. of sugar free syrup and saute until veggies are soft. Allow to cool.



Step 3: Mix the turkey meat with the veggies and then stuff into the bell peppers.





Step 4: Sprinkle with some veggie cheese or Parmesan (my favorite) 


Step 5: Bake for 30 minutes at 375 degrees. Cool and then serve with a side of asparagus.
